This beef stir-fry has become one of my personal favorites because it is, no exaggeration, a 20-minute dinner recipe that even I, with three kids and a baby hanging around the kitchen, can manage to make happen often.\u00a0<\/p>\n<p>Packed with veggies, tender beef and a delicious chili-garlic sauce, this is a dinner that aims to please. Keep it in your back pocket and enjoy knowing that even when you get home late, a healthy dinner is just a few quick minutes away.\u00a0<\/p>\n<h2>Healthy beef stir-fry recipe<\/h2>\n<p>Serves 4<\/p>\n<h3>Ingredients:<\/h3>\n<ul>\n<li>1 tablespoon coconut oil<\/li>\n<li>12 oz flank steak, thinly sliced (or thinly sliced outside round steak)\u00a0<\/li>\n<li>1 red bell pepper, cut into thin strips<\/li>\n<li>1 yellow bell pepper, cut into thin strips<\/li>\n<li>3 tablespoons tamari<\/li>\n<li>2 tablespoons rice wine vinegar<\/li>\n<li>1 to 2 teaspoons grated fresh ginger<\/li>\n<li>2 teaspoons chili garlic sauce\u00a0<\/li>\n<li>1 to 2 teaspoons honey<\/li>\n<li>4 green onions, cut into strips<\/li>\n<li>Toasted sesame seeds for garnish<\/li>\n<li>4 cups cooked rice and\/or quinoa for serving\u00a0<\/li>\n<\/ul>\n<h3>Directions:<\/h3>\n<p><strong>1.<\/strong> In large skillet, heat coconut oil over medium-high heat. Add the beef to the pan and cook for 2 minutes.<\/p>\n<p><strong>2.<\/strong> Toss in the bell peppers and flip over the beef pieces, cook for an additional 2 to 3 minutes, or until the beef is no longer pink and the bell peppers have softened slightly.\u00a0Remove mixture from pan and set aside.\u00a0<\/p>\n<p><strong>3.<\/strong> In the same skillet, add the tamari, vinegar, ginger, chili-garlic sauce and honey. Bring to a simmering boil over medium heat while whisking constantly. Cook for 1 minute or until slightly thickened.<\/p>\n<p><strong>4<\/strong>. Return the beef and bell peppers to the pan. Add the green onions and toss mixture well to coat with sauce. Remove from heat.<\/p>\n<p><strong>5.<\/strong> Sprinkle with sesame seeds.
